1/2 cup coconut oil or butter softened 1 1/4 cups white sugar 2 eggs beaten 1 teaspoon vanilla extract 3 ripe bananas mashed 1 3/4 cups all-purpose flour 1 teaspoon baking soda 1/2 teaspoon salt (optional)


1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9×5 inch loaf pan.


2. Cream together the butter, sugar, eggs, and vanilla extract in a large mixing bowl. Stir in the mashed bananas. Combine the flour, baking soda, and salt; stir into the banana mixture until just moistened. Pour batter into prepared loaf pan.


3. Bake for 55 to 65 minutes in the preheated oven, or until a toothpick inserted into the center of the loaf comes out clean.


4. Cool in pan for 10 minutes, then turn out onto a wire rack to cool completely. This banana bread freezes well wrapped in foil.
