sweet corn kernels (fresh or frozen), milk, chicken broth, potatoes, salt and freshly ground black pepper to taste, bay leaf and chopped fresh parsley for garnish (optional).

Method:
Remove kernels from cob using a sharp knife.

peel the potatoes and cut into 1/4-inch cubes.
combine kernels, potatoes, bay leaf, salt and pepper to taste with enough chicken broth to cover ingredients.

Cook over medium heat for 15 minutes or until corn is tender.

Serve corn in bowls with milk and garnish with chopped fresh parsley (optional).

 

6. Is it safe to eat raw sweet corn kernels?

sweet corn can be dangerous if consumed raw or undercooked.
Raw kernels contain a toxic protein known as the “Shiga toxin”, which is associated with severe gastroenteritis and can cause kidney failure in rare cases.

Completely cooking corn removes the Shiga toxins and makes it safe for consumption.
Please use corn in recipes that call for corn to be boiled or steamed.
Never eat it raw.

Remember never undercook  corn. overcooking it is a better option than undercooking.
If you want to make a salad with kernels, make sure the corn has cooled down before adding corn to the salad.
Do not leave corn in an unrefrigerated state for too long or corn will spoil.
